The 5-Min Upma Pesarattu

Ingredients
The Batter & Toppings:

1 cup koh! Sprouted Moong Dal Mix

1 small onion, 1-inch ginger, 2 green chilies (all finely chopped)

Fresh cilantro

Oil or Ghee for frying
The Upma:

½ cup Semolina (Rava)

1.5 cups Water
-
1 tsp Mustard seeds & Curry leaves

Salt to taste
The Process
1. Prep the Batter Mix the koh! powder with water to a smooth, pourable consistency. Let it sit for 5 minutes.
2. Cook the Upma Temper mustard seeds and curry leaves in oil. Add rava, roast briefly, then add water and salt. Stir until thick and fluffy. Keep aside.
3. Spread the Pesarattu Pour a ladle of batter onto a medium-hot griddle. Spread thin in a circular motion.
4. Season & Crisp Sprinkle the chopped onions, ginger, chilies, and cilantro on top. Drizzle oil around the edges and cook until the bottom is golden and crisp.
5. Fill & Fold Place a large scoop of upma in the center, fold the Pesarattu over it, and serve hot.
