High Protein Paneer Pesarattu

Ingredients

  • Base: 1 cup koh! Sprouted Moong Dal Mix

  • The Crunch: 1 small onion (finely chopped) and 1 medium carrot (finely grated).

  • The Protein: ½ cup paneer (crumbled).

  • Aromatics: 1-2 green chilies (chopped), a sprig of curry leaves, and fresh coriander.

  • Seasoning: A pinch of salt and a dash of cumin seeds (jeera).

  • Fat: Ghee or oil for frying.


The Process

  1. Prep the Batter: Whisk the koh! mix with water until smooth and "dosa-like." Let it hydrate for 2 minutes.

  2. Mix the Toppings: In a bowl, toss the onion, carrot, paneer, chilies, and coriander together so they are evenly distributed.

  3. The Pour: Heat a tawa on medium-high. Pour a ladle of batter in the center and spread it into a thin circle.

  4. Set the Toppings: Immediately sprinkle the paneer-veggie mix over the wet batter. Press down firmly with a spatula to embed the toppings into the dosa.

  5. The Steam (No-Flip): Drizzle ghee around the edges. Cover the tawa with a lid for 2 minutes. This steams the veggies and softens the paneer without needing to flip.

  6. The Crisp: Remove the lid and cook for another 30–60 seconds until the bottom is golden brown and the edges lift easily.

  7. Serve: Slide it directly onto a plate. Enjoy hot with tomato chutney!
